A delicious dinner of Maitake Mushrooms and "Green "Meatballs." Maitake, Grifola frondosa, is one of my favorite edible healing mushrooms.
Green Meatballs- organic, grass fed local beef, kale, parsley, garlic, parmesan, onions, shredded carrots.
Maitake.
Simmering meatballs in tomato sauce, paste and fresh tomatoes from the garden. Lots of Basil, Sage, Rosemary, Oregano...

The mushrooms are an interesting addition? I'm wondering if Lucas would go for green meatballs. I think I should try it!
OMG!!! Makes me wish I hadn't just ate! Although we did have bowls of scrumptious potato leek soup with everything from our CSA except the milk, but even that is local raw milk. Oooo I am so totally making these meatballs with this mushroom and cream sauce!!!
It looks wonderful! The green meatballs are a great idea. I need to see if I can locate maitake here.
